Creamy Bacon and Sausage Pasta

  • 1 lb. patsa
  • 2 large sausage links
  • 12 slices of bacon
  • 4 cups of spinach
  • 1 Tbsp. of garlic, minced
  • 8 oz. of tomatoes, sliced (I use cherry tomatoes)
  • 1 tsp. paprika
  • 1/4 tsp cayenne
  • 1 tsp Italian seasoning
  • 2.5 cups of heavy cream
  • 2 cups of milk
  • 2 Tbsp flour
  • 2 Tbsp of butter
  • 1/2 Tbsp of salt
  • 4.5 cups of cheese + 2 slices of pepper jack if desired

  1. Cook bacon on 400 for 20-30 min (or until desires crispiness). Save bacon grease and set aside.
  2. Cook sausage in skillet.
  3. Boil pasta. I use elbows for this recipe, but you can really use any kind you prefer. Drain.
  4. Cut up sausage into bite size pieces. Crumble bacon.
  5. Pour bacon fat into large pot. Add spinach, garlic, and tomatoes. Allow the spinach, garlic, and tomatoes to cook down on med-low heat.
  6. Add paprika and cayenne.
  7. Add milk, heavy cream, butter, and flour.
  8. Stir until smooth. Wait for the liquid concoction to heat up. Add cheese and stir until blended through.
  9. Add pasta, sausage, and bacon.
  10. Stir until well blended.
  11. Serve in a bowl. Top with grated parmesan cheese and fresh basil.
